1 stick (1/2 cup) unsalted butter
1 cup granulated white sugar
2 eggs
2 tbsp sour cream or plain yogurt
1 3/4 teaspoons baking powder
1/2 teaspoon salt
1 1/4 cup plus 2 tablespoons all purpose flour
1/2 cup milk
1 teaspoon vanilla extract
3/4 cup cherries, pitted, sliced and half (fresh or frozen works)
1 tbsp all purpose flour, for coating the cherries
FILLING and TOPPING:
3/4 cup plus 2 tablespoons almond flour
1/2 cup granulated white sugar

3 large ripe bananas (roughly mashed)
8 Tablespoons melted unsalted butter
1/2 cup granulated sugar
1/2 cup brown sugar (packed)

Method:

Mash the bananas in a mixing bowl, add melted butter, brown sugar, caster sugar, egg and vanilla extract. Whisk well until combined.

Butteries, also known locally as rowies, are a kinda morning roll that hail from the north east of Scotland, specifically Aberdeen. They are a bit like a cross between a morning roll and a croissant, but are flatter and irregular in shape. Originally they had a hefty addition of salt so they could stay edible for long stretches at sea for the local fishermen. I researched a lot of recipes, all different, and settled here with my version. I hope you enjoy it!

2 cups old fashioned oats 
1 cup maple syrup 
1/2 cup melted coconut oil 
1 tablespoon ground cinnamon 
1/2 tsp ground ginger 
1 cup pepitas 
1 tsp vanilla extract

Mix everything in a medium mixing bowl before pouring on a large baking sheet lined with parchment paper and flattening everything out.

20.2 pounds of pork belly sliced into 6 pieces or about 3.4 pounds each. $4.54 per pound in Canadian dollars (or $3.25 USD per pound). A package of bacon in Canada costs about $9.50 per pound ($6.84 USD per pound). They pump so much water into the packaged and thats why it shrinks so much. So you are paying for water! My bacon does not shrink that much.  So you save money making your own bacon but homemade bacon tastes so much better!

For 3.4 pounds of pork belly I add 1/4 cup salt (6%) 
1/2 tsp pink salt (0.8%) 
1/3 cup of maple syrup.

RECIPE (8 bagels, 2 1/2h prep time):
-1 1/2 cups (360ml) lukewarm water
-3 Tsp instant yeast
Stir until dissolved
-4 cups (520g) flour
-1 Tsp salt
-1 Tbsp sugar
Stir then knead with floured hands until it’s a soft dough.
Let it rest 60-90mins.
Divide in 8 balls and shape by pressing a hole in the middle.
Water bath:
-about 2 liters water
-1/4 cup (60ml) agave or maple syrup
Bring to a simmer then cook the bagels 1min each side.
Brush with vegan cream (and add sesame seeds if you want).
Bake at 220C/425F for 20mins.

How to:
Start by adding your cottage cheese, eggs, milk, melted butter, and maple syrup to a blender. Blend on medium speed for two minutes.

Croissant French Toast

4 croissants, preferably a day old
4 large eggs
1 cup milk (any type)
1 Tbsp sugar
2 tsp vanilla extract
1/4 teaspoon kosher salt
butter, for greasing the pan
toppings like powdered sugar, syrup, fresh berries, etc.

Slice open the croissants.
In a large bowl, whisk the eggs until frothy. Add milk, sugar, vanilla, and salt and whisk until combined.
Dunk the croissant halves in the egg mixture, turning to coat. 
Heat a griddle or large nonstick pan to low-medium heat.
When the griddle is hot, grease the surface generously with butter.
Working with one croissant at a time, remove it from the custard, letting excess drip off. Cook the croissants on both sides
