This idea came from a recent #MilkStreetCookingSchool class with our own April Dodd, who miniaturized the best focaccia we’ve ever had—an almost impossibly light, open-crumbed focaccia that our editorial director J.M. Hirsch tried at Panificio Fiore in Bari, Italy. The beauty of the muffin tin focaccia, April taught us, is that each develops more crispy crust surface area, and each remains moist and squishy, unlike a cut focaccia. Needless to say, these lasted precisely 60 seconds on the “up for grabs” table.
