Our NSW Team met with Katie Losito President of Jasper Hill Farm recently for the launch of the first-ever air-freight shipment of fresh white moulds and washed rind cheeses from Jasper Hill Farm in Vermont USA. We thank Katie for lending her time and expertise in sharing their beautiful story with us. Founded in 2003, the Kehler family started Jasper Hill Farm setting out to create a model for small-scale dairy farming and value-added agriculture. From fixing up the barn and adding a creamery next door they achieved some renown and local acclaim, this lead to a collaboration with Cabot Creamery Cooperative and the maturing of cheese – including Cabot Clothbound Cheddar. Success with the maturing of this cheese eventually lead to the building of a 22,000-square-foot, 7 vaulted underground aging facility – The Cellars at Jasper Hill. Jasper Hill Farm was imagined as a ‘value-added’ strategy for earning a dependable and fair return on high-quality milk - a model for small-scale profitability. The building itself is a network of seven underground vaults - a total of 22,000 square feet nestled beneath the pastures where Jasper Hill’s forty Ayrshire cows graze. Each cave rests at distinct temperature and humidity levels, calibrated for different cheese styles. By offering a collection of professionally aged and marketed cheeses, Cellars at Jasper Hill allows its producers to focus on the most important aspects of their trade - quality milk production and cheesemaking techniques. This focus on precision and specialisation is the foundation of the Cellars aim to be the standard bearer for quality and innovation in the artisan cheese industry.
