Pullman Yards Is Offering Three-Month-Long Residencies for Chefs

Chefs can now apply for a paid residency at Brick and Mortar where diners vote for their favorites

A new restaurant space in Pullman Yards will let diners vote on which up-and-coming chefs should take the helm in the kitchen.

Dailies & Sides is set to become Brick & Mortar, an “incubator space” where a new chef will land a residency at the restaurant for up to three months in a fully staffed kitchen. The idea is an extension of the popular Chefs Market and Bazaar at Pullman Yards, where more than 30 food vendors set up shop on Fridays and Saturdays. The market has given rise to pop-ups like Kamayan ATL and Zarate Kitchen.

How a chef lands this coveted paid residency is dependent on diners. People who visit the Chefs Market at Pullman Yards will get to vote for their favorite chefs — the ones at the market or other chefs who apply — to take over the Brick & Mortar space. The first residency will debut on August 10, with voting underway soon. Winning chefs will be paid from the sale of their dishes.

“It is different than a pop-up,” says Adam Rosenfelt, co-owner of Pullman Yards. “This residency is for someone who is serious about cooking and will want to work at it 100 percent. We want to give chefs the opportunity for growth and exposure.”

Brick & Mortar will have a staffed front of house, back of house, bar program, and a base menu set by in-house culinary director Alan Somphonephakdy, founder of Asian street food pop-up Salty Smiles. The restaurant will operate Wednesday to Sunday, with the resident chef given creative control over the menu.

“We hope the program can serve as a springboard to bring fully formed food & beverage concepts to life that may not have otherwise had the opportunity,” says Rosenfelt in a statement. “Plus, we want guests to feel some ownership in having the chance to help decide what’s featured next.”

Pullman Yards is a 27-acre property in Kirkwood with eight event spaces and multiple restaurants such as the 2023 Michelin Bib Gourmand recipient Fishmonger II, a drinks hall cheekily named AlcoHall, a film and soundstage (used for films like The Hunger Games, Baby Driver, and Bad Boys, among others) and a residential complex.
