I just received Carley Shimkus' cookbook and finished paging through it. The recipes look both delicious and doable, and the photos are gorgeous. Carley brings such enthusiasm and warmth to her programs on Fox, so I knew this book would be special. But I had no idea how special.
My mother was from Puerto Rico, and passed away before I could write down her recipe for rice and beans. I was astounded to find Carley's mother, Zulma's, recipe. It feels completely right, if that makes sense! I'm going out to buy Goya's frozen sofrito tomorrow!
