Adventurous dining is a big part of the New Mexico experience, but don’t let tales of head-exploding chile scare you from trying local dishes. True, our official state vegetable (actually, it’s a fruit) can pack a capsicum punch, but a good New Mexico dish uses chile to enhance flavor, not to send you rushing to down the nearest pitcher of margaritas. Traditional New Mexico fare, not to be confused with Mexican, can be found from food trucks to four-star establishments. Many family restaurants serving traditional, chile-based plates are listed in this section, but make sure and explore the many other types of cuisine that are putting Albuquerque on the culinary map. Chefs from around the world have relocated to Albuquerque, and are creating exciting fusion plates based on old favorites using new ingredients. Steaks are top notch in this cowboy country, but seafood flown in fresh from the gulf coast daily is also a pleasant surprise.
