Opened June 20, 2024, the groundbreaking 88-room five-star Hôtel du Couvent—a restored 17th-century convent hidden on a hill in Vieux Nice—is bound to put France’s fifth-largest city on the luxury traveler’s map. With three restaurants and three pools including a restored Roman bath, plus a spa, extensive gardens, a bakery, a bookstore and colossal suites, this neo-resort is also just minutes away from the Promenade des Anglais and the beachfront.

The stylish boutique project comes from cool-kid group Perseus, of Les Roches Rouges on the Côte d’Azur and Le Pigalle in Paris.

She reports: “There’s nothing quite like the five-star gorgeously restored 17th-century convent, Hotel du Couvent in Vieux Nice, which took ten years to finish—first, because of the guiding philosophy of its owner, Valéry Grégo, whose original vision of an urban oasis goes beyond a simple labor of love. The location is already quite special: the 88-room hotel is hidden from view perched on a serene hilltop, flush with Nice’s Parc du Château, but minutes away from the lively cobblestone streets of Old Town, but you have the feeling that you’re off in the countryside. I particularly loved the informal Guinguette restaurant—twittering birds, a view of the spectacular terraced gardens (an Eden of carefully tended blooms, fruit and vegetables)—where they serve simple but farm-to-table ultra-fresh dishes topped with edible flowers. You also have to admire the hotel's respect for the spirit of the convent: the vaulted corridors, the handpicked antique artwork, the minimalist but warm interiors of the rooms, and a slim stone pool overlooking the city. Add to that the on-site bakery and the herbalist shop, both of which were placed exactly where the nuns kneaded their dough and concocted herbal teas for all ailments 400 years ago. You may not even want to leave the property—there’s an inviting documentation center, a Roman bath-inspired spa and peaceful secret corners to read, all designed to nourish your mind and body.”
